Muffins with Egg & Bacon

Breakfast or Brunch?

Ingredients (for 4):

  • 4 slices of bacon
  • 4 small round breads, sliced in half (horizontally)
  • 100 grams of cream cheese
  • 2 medium tomatos in slices
  • 4 big eggs

Instructions:

  1. Warm up the oven and bake the bacon until it gets a slight colour. Shut down the oven and leave the bacon in to keep it warm. (You may also fry it, according to your preferences).
  2. Toast the breads from both sides. Simultaneously slightly bake the tomatoes. (You can leave them in the hot oven for a few minutes, or sauté them in the pan where you friend the bacon).
  3. Spread cream cheese in one half of the breads and add the tomato slice on the other half.
  4. Boil the eggs for 2-3 minutes. You want them to be soft-boiled.
  5. Add the egg and then the bacon slice on the half bread slice with the cream cheese.

Quick Strawberry Cheesecake

10’ to prepare

Ingredients:

  • 4 biscuits (digestive)
  • 150 grams of fresh strawberries
  • 120 grams of light cream cheese
  • 1 tbsp sugar
  • 1 teaspoon of vanilla sugar
  • a few fresh mint leafs

Instructions:

  1. Crumble the biscuits and place them on the bottom of a small glass.
  2. Slice the strawberries and add them on the top of the biscuits.
  3. Mix the sugar, the vanilla and the cream cheese until the mixture becomes a soft cream (use a mixer).
  4. Use a spoon to add a bit of the mixture on top of the strawberries in the glass.
  5. Garnish with mint leafs.

Salmon Pizza

A Healthy Pizza Option!

Ingredients:

  • 400 grams pizza dough
  • 200 grams of cream cheese
  • 4 tbsp of chopped chives
  • 1 teaspoon of lemon zest
  • 2 onions in slices
  • 400 grams of smoked salmon
  • 1 bundle of basil
  • salt & fresh cut pepper

Instructions:

  1. Preheat the oven at 210ºC. Mix the cream cheese with the chives, the lemon zest, the salt and the pepper.
  2. Cut the pizza dough in six parts, spread the cream cheese mixture, fold the corners and bake for 10 minutes.
  3. Remove from the oven, add the onions and bake for another 10 minutes.
  4. Lastly add the salmon, some basil for decoration and serve.

Bread & Tuna

Breakfast for Tuna Lovers!

Ingredients:

  • 4 slices of white bread (or anything you prefer really)
  • 120 grams of light cream cheese
  • 40 grams of chopped lettuce
  • 200 grams of tuna in WATER not oil
  • 2 tbsp fresh lemon juice (or lime)
  • fresh-cut pepper

Instructions:

  1. Spread cream cheese on the bread slices and place a bunch of lettuce on top.
  2. Mix the tuna with the lemon juice and the pepper.
  3. Spread the tuna mixture on the lettuce.

Tess’s Loaded Club-Sandwich

My boyfriend’s favourite dinner.

So I usually spoil my boyfriend Chris by making him whatever he wants to eat, even if it’s late, because I love making people smile through my cooking.

Ingredients:

  • 4 slices of toast bread (I use multigrain)
  • 1 boiled egg
  • 3 slices of turkey
  • 3 slices of toast cheese
  • ketchup & mayonnaise
  • lettuce
  • grated cheese (any king)
  • potatoes

Instructions:

  1. Peal, wash and cut the potatoes in any shape ( you can keep the skin on if you prefer but make sure you wash them very carefully at first). Fry the potatoes in vegetable oil.
  2. While you’re frying the potatoes use the toaster for the bread slices. Make a mixture of mayonnaise and ketchup and spread a bunch on one side of the three slices (not the fourth!!!).
  3. Add a slice of egg, a bunch of lettuce, a slice of cheese and a slice of turkey in between the bread slices.
  4. Cut diagonally and serve with potatoes. Garnish the potatoes with cheese.

This is pretty much what it looks like when it’s done.

Spaghetti with Salmon & Dill

Ingredients:

  • 300 grams spaghetti
  • 175 grams of Philadelphia cream cheese (but the one with the salmon and dill, which looks like that :                                                     31793
  • 2 tbsp milk
  • lemon and dill for decor

Instructions:

  1. Boil the spaghetti according to the instructions on the box.
  2. Mix the Philadelphia and the milk in a pan until they become a creamy mixture.
  3. Add salt and pepper to the mixture and pour on top of the spaghetti.
  4. Garnish with lemon slices and dill on each plate.

Grilled Mushroom Burger

Ingredients (for 4):

  • 4 breads for burgers
  • 4 big portobello mushrooms
  • 200 gram cream cheese
  • 1 tomato
  • 4 chopped scallions
  • 0.5 tbsp chopped fresh rosemary
  • 3 tbsp olive oil
  • salt & fresh cut pepper

Instructions:

  1. Scour the mushrooms, cover them with the oil, add salt and pepper and bake in preheated grill at 200º for about 3-4 mins at each side, depending on the oven. Remove from the oven sprinkle with rosemary.
  2. Cut the burgers in half and spread cream cheese on each side of the breads. Add tomato in the middle, then add the mushroom, sprinkle with scallions and close the burger.
  3. Repeat with the rest of the burgers.

 

Reginette with Cream Cheese & Mushrooms

Someone said lunch?

Ingredients:

  • 1 clove of garlic
  • 350 grams mushrooms
  • 1 bunch of parsley
  • 320 grams of pasta (type reginette)
  • 1 bag of safran
  • 100 grams cream cheese
  • 4 tbsp of extra virgin olive oil
  • salt

Instructions:

  1. Clean the garlic and fry it in a bit of oil, remove the garlic and add the mushrooms, which you let cook for about 20 mins. Add salt, a tbsp of chopped parsley and stir.
  2. Boil the pasta al dente. Take some of the water from the pasta after it starts boiling and mix it with the safran and the cream cheese, then stir.
  3. Strain the pasta, throw them on the pan with the mushrooms and add the cream cheese mixture. Stir slightly and serve with a bit of chopped parsley on top.

Ciabatta with Turkey & Cream Cheese

An Italian Flavor!

Ingredients:

  • 1 turkey breast (about 150 grams)
  • 1 egg yolk
  • 2 tbsp sesame seeds
  • 1 tbsp vegetable oil
  • 4 small ciabattas
  • 100 grams of light cream cheese
  • 1 tbsp basil pesto
  • 1 bunch of rocket leaves
  • 2 tomatoes

Instructions:

  1. Whip the egg yolk in a bowl and add salt & pepper. Spread the sesame seeds on a plate, take the turkey breast and after you dip it in the egg you roll it in the sesame seeds so that it becomes fully covered.
  2. Fry the turkey breast in very hot oil. Let it cool down on a piece of absorbent paper and cut in slices.
  3. Cut the ciabattas in the middle horizontally. Spread them with cream cheese and place the turkey on them, then the rocket, the pesto and a few slices of tomato. Close the sandwich with the top part of the ciabatta.
