Tomato Soup

Fancy and colourful!

Ingredients (4 people) :

  • 2 teaspoons of olive oil
  • 1 big chopped onion
  • 1 garlic clove
  • 800 grams of chopped tomatoes
  • 450 ml of vegetable stock
  • fresh cut pepper
  • 1/2 tbsp of sugar
  • 2 teaspoons of tomato puree 
  • 4 tbsp of light cream cheese
  • few leafs of fresh basil

Instructions :

  1. Heat the oil in a big pan and sauté the onions and the garlic until they start getting soft. Add the chopped tomatoes, the sugar, some pepper and the tomato puree and cook for about 4-5 minutes while stirring often.
  2. Add the vegetable stock ( while first dissolved in 450 ml of warm water) and boil with the tomato mixture. Lower the heat and let it boil for about 4-5 minutes until it absorbs the water.
  3. Remove the soup from heat and pulper in a blender or multi.
  4. Taste it and add a bit of sugar or fresh cut pepper if needed. Add a big spoon of cream cheese in each portion and serve with a basil leaf
