Lemon Pie


Enjoy the most refreshing dessert.

Ingredients (6 people) :

  • 200 grams of flour
  • 100 grams of butter
  • 30 grams of sugar
  • 4 egg yolks
  • 300 ml of milk
  • 100 grams of creme cheese
  • 40 grams of cornflour
  • 1 pinch of salt
  • juice from 1 lemon
  • zest from 2 lemons

Instructions :

  1. Pour the flour in a bowl, make a hole in the middle and add the butter and the egg yolks. Knead with fast movements and leave the dough in the fridge for 1 hour. Spread the dough in a form and cut out the corners that protrude. Pierce the dough with a fork in random spots, cover with nonstick paper and pour some kind of legumes on top of the paper.
  2. Bake the dough in a preheated oven in 200°C for 15 minutes and then remove the nonstick paper and the legumes and bake for 10 more minutes. Let the dough in room temperature.
  3. Boil the milk with the sugar. Mix 3 of the egg yolks, the cornflour and 2 tbsp of the hot milk. Mix the rest of the milk with the lemon juice and the lemon zest and the creme cheese. Spread uniformly the creme at the base of the pie and leave it in the fridge for 1 hour.
